Thanks to the integrated SmartAging® technology, meat, ham, fish, sausage, cheese, herbs, pasta, and much more can be easily aged or dried at the touch of a button. Dry aging has never been so simple and reliable. The SmartAging® technology enables automated aging with a guaranteed success rate.
The aging cabinet offers the possibility of maturing meat over a freely selectable period. Thanks to the controlled temperature of 2°C and 85% humidity inside the cabinet, meat can be hung on the bone and allowed to breathe. The precise electronic control ensures accurate and constant temperature maintenance. If necessary, the temperature can be adjusted in 0.1°C increments, as can the humidity, which can be regulated between 40% and 90%.
Thanks to highly developed technologies, the ripening cabinet maintains the perfect climate, optimal airflow and continuous disinfection even with large fluctuations in ambient temperature.
The metallized insulating glass door perfectly protects the meat suspended inside from harmful UV radiation, all within an optimally coordinated lighting and product presentation.
The Dry Ager It attracts everyone's attention and does an unbeatable job - after 6 weeks of maturation, the refined meat loses only about 12% of its weight.
