The brown artificial casing "Krone," with a diameter of 55 mm and a length of 21 cm, is specially designed for the production of beer sausage and similar sausage varieties. Its silky-matte surface gives the products an appealing appearance, while its excellent shrinkage properties ensure optimal adaptation to the contents. Thanks to its excellent barrier effect, the sausage's aroma is preserved, and its outstanding adhesion to the meat mixture guarantees a uniform texture.
The casing is impermeable to water vapor, oxygen, and aromas, as well as being fat-resistant, which contributes to the sausage's longer shelf life. Its good grip and ease of processing by machine make it suitable for both artisanal and industrial use. Please note that this casing is not suitable for smoking. Before use, the casing should be rinsed in lukewarm running water without pricking it. After scalding, it is recommended to hold the sausage under running water again and briefly moisten it before slicing to ensure quality. For extended shelf life, the vacuum-packed sausage can be cooled to 2°C and sealed immediately.
